Watercress sauce; see below | ||
Whisky sauce; see below |
Heat grill, setting rack 4" from heat.
Place butter in pan large enough to hold salmon; melt under grill. Remove pan from heat, place salmon in butter, turning to coat. Grill until firm and lightly golden on top, about 4 min. Turn salmon over, baste with butter and grill another 4 min. Test for doneness. Serve with watercress sauce and/or whisky sauce. From: Michael Loo Date: 14 May 98
